Farm 2 Fork Goes Online - Mucver + Garlic Yoghurt

You will need:

2 courgettes

150g feta cheese

1 onion

Onion greens

1 tsp garlic puree

Dill

Mint

2 eggs

3 tbsp flour

200g yoghurt

Salt and pepper

Cooking oil

1. Grate the courgette into a large bowl and sprinkle a couple of pinches of salt over it. Mix in the salt and put aside.

2. Mix the garlic puree and a pinch of salt with the yoghurt and leave in the fridge to chill.

3. Finely chop the onion, onion greens, dill and mint. Leave some dill to garnish…

4. Drain the grated courgette and squeeze out as much water as you can.

5. Add the onions, spring onion, dill and mint to the courgette and crumble in the feta cheese.

6. Beat the eggs and combine with the flour and a little pepper. Add the courgette mix and stir into a batter.

7. Heat some cooking oil in a frying pan (enough to shallow fry).

8. Spoon tablespoons of the batter into the oil and fry until browned on both sides.

9. Remove fritters with a slotted spoon and leave on a plate lined with kitchen towel.

10. Garnish Mucver and yoghurt with leftover dill.

11. Serve Mucver with garlic yoghurt.
