Farm 2 Fork Goes Online - Potato + Black Bean Hash

You will need:

500g potato

bunch of chard

1 onion can

(235g drained) of black beans

1 tsp paprika

30g cheese

cooking oil

salt and pepper

Optional extras: 2-4 eggs, any other veg, diced

1. Wash and pat dry the vegetables.

2. Dice the potatoes and thinly slice the onion.

3. Heat 2 tbsp oil in a large frying pan or wok and cook onions until they start to brown.

4. Add potatoes and cook, stirring occasionally, until tender, about 10-15 minutes.

5. Add paprika and a pinch of salt and pepper.

6. Cut off chard stems and dice. Slice chard into ribbons.

7. Add chard stems and drained black beans and cook for a further few minutes, constantly stirring.

8. Add chard ribbons and stir through.

9. If using eggs, make little dips in the potato mixture and crack an egg into each dip. If not, go straight to step 11.

10. Cover and cook for a few minutes, until eggs are cooked.

11. Turn off the heat and grate cheese over the potato mixture.
